Roasted ‘Ulu Mash with Garlic & Coconut Milk
A creamy, rich, and flavorful side dish perfect for pairing with grilled fish, meats, or veggies.
Ingredients:
- 1 medium ‘Ulu (breadfruit) (peeled, cored, and cut into chunks)
- 2 tbsp olive oil or coconut oil
- 3 cloves garlic, minced
- 1/2 cup coconut milk (more if you prefer a creamier consistency)
- Salt and pepper, to taste
- Fresh herbs (like parsley or cilantro), for garnish (optional)
Instructions:

Prepare ‘Ulu:
- Preheat oven to 400°F (200°C).
- Peel, core, and cut the ‘Ulu into chunks.

Roast ‘Ulu:
- Place ‘Ulu chunks on a baking sheet, drizzle with olive oil or coconut oil, and sprinkle with salt.
- Roast for 25-30 minutes, or until golden brown and fork-tender.

Mash:
- In a large bowl, mash the roasted ‘Ulu while it's hot.
- Add minced garlic and coconut milk, and continue mashing until smooth and creamy.
- Season with salt and pepper to taste.

Serve:
- Transfer to a serving bowl, drizzle with extra olive oil if desired, and garnish with fresh herbs.
- Enjoy as a side dish or use as a hearty base for savory toppings.
